SONOMA, CA – November 13, 2025 – Fairmont Sonoma Mission Inn & Spa is delighted to announce the appointment of Brice Giannotti as General Manager of Santé, the resort’s signature restaurant. With more than two decades of experience leading luxury dining and beverage programs across Northern California’s most respected hospitality venues, Giannotti brings a dynamic blend of culinary passion, operational excellence, and heartfelt leadership to Sonoma Valley’s most iconic destination.
A native of Benicia, California, Giannotti’s career spans acclaimed private clubs, luxury resorts, and destination restaurants. Most recently, he served as Director of Food & Beverage at Moraga Country Club, where he oversaw multiple dining outlets and a full-service catering program. Under his guidance, the club achieved record guest satisfaction and significant improvements in service delivery and operational performance.
Previously, Giannotti held key leadership roles with Wing & Barrel Ranch in Sonoma, El Dorado Kitchen, Lark Creek Restaurant Group, and Jack’s Restaurant & Bar, where he honed his expertise in menu innovation, cost control, and guest engagement. Earlier in his career, he served as Executive Chef at Lucca Bar & Grill, where his creative approach to food and beverage programming earned acclaim from both guests and peers.
At Fairmont Sonoma Mission Inn & Spa, Giannotti will oversee all aspects of operations at Santé, renowned for its locally inspired cuisine, refined wine program, and genuine hospitality. Known for his collaborative spirit and mentorship-driven leadership, Giannotti will help guide the restaurant’s next chapter—deeply rooted in Sonoma’s agricultural bounty and sense of community.
